  • 1/4 cup unsalted butter; softened
  • 1/2 cup granulated sugar
  • 1/2 tablespoon grated apples
  • 1 cup all purpose flour
  • 1/8 teaspoon Salt
  • 1/8 teaspoon baking soda
  • 3 tablespoons granulated sugar
  • red food coloring
  • 1/2 cup confectioner’s sugar
  • 2 tablespoons apple juice

In a large bowl, cream butter and sugar. Add apples; mix well.

Sift together flour, salt and baking soda; add to creamed mixture.

Knead dough on a floured surface until smooth. Divide in half. Wrap separately and chill until firm, about 1 hour.

Shape each half into an 8″ long log. Roll logs in coloured sugar to coat. Wrap and chill until hard, about 3 hours or overnight.

Butter and flour the baking pans.

Unwrap and slice the dough into 1/4″ thick rounds. Place two rounds in each prepared pan, slide into the oven, bake in Easy-Bake Oven until beginning to brown around edges, about 20 minutes.

Cool the pans on a wire rack.

Icing:

Mix confectioner’s sugar and apple juice. When cookies are done, transfer to wire racks. Brush cookies with icing and let cool.
