Potato Chip Cookies
  • 2 tablespoons Shortening
  • 2 Tablespoons sugar
  • 2 tablespoons brown sugar
  • 1/4 egg
  • 1/8 teaspoon vanilla extract
  • 1/4 cup all purpose flour
  • 1/8 teaspoon baking soda
  • 1/8 teaspoon Salt
  • 1/4 cup potato chips; crushed

Cream together shortening, sugar and brown sugar in a large bowl until light and fluffy. Stir in vanilla.

Combine flour, baking soda and salt. Gradually stir into creamed mixture.

Fold in potato chips.

Drop by spoonfuls onto ungreased Easy-Bake Oven pan.

Bake 8 – 10 minutes in Easy-Bake Oven.

Allow cookies to cool on baking sheet for 5 minutes before removing to wire rack to cool completely.
