- 1 cup all purpose flour
- 1/4 teaspoon baking soda
- 1/8 teaspoon Salt
- 3 tablespoons margarine; softened
- 2 tablespoons peanut butter; chunky
- 1/2 cup brown sugar; firmly packed
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
Combine flour, baking soda and salt in a bowl. Stir well and set aside.
Beat margarine and peanut butter in a large bowl at medium speed until light and fluffy. Gradually add sugars, beating until well blended.
Add vanilla, beat well. Stir in flour mixture.
Divide dough in half. Shape each half into an 8″ log. Wrap and chill until hard, about 3 hours or overnight.
Grease and flour Easy-Bake Oven baking pans.
Unwrap dough and slice into 1/4″ rounds.
Place 2 round into each pan, bake until beginning to brown around edges (about 20 minutes).
Cool pans on wire rack.
