- 1/2 cup Butter
- 1/2 cup Sugar
- 1 tablespoon milk
- 1/2 teaspoon Vanilla
- 1 1/4 cups all purpose flour
- 1/2 cup red candied cherries; finely chopped
- 1/4 cup pecans; finely chopped
- 1/2 cup flaked coconut
Beat butter in a large mixer bowl until softened. Add sugar and beat until fluffy.
Add milk and vanilla, beat well. Add flour and beat until well mixed.
Stir in cherries and pecans.
Divide mixture in half. Wrap separately and chill until firm (about 1 hour).
Shape each half into 8″ log. Roll each log in coconut. Wrap and chill until hard (about 3 hours or overnight).
Grease and flour Easy-Bake Oven baking pans.
Unwrap and slice dough into 1/4″ rounds. Place 2 rounds in each prepared pan and bake in Easy-Bake Oven until beginning to brown around edges (about 20 minutes).
Cool pans on wire rack.
